Dessert Dinner

 Enjoying the red kiwifruit. I prefer them over the gold kiwifruit. The green kiwifruit is still nice though. The urchins decided the dinner theme tonight is "Dessert".
Chocolate mousse with chocolate fish


Waffles - with chocolate sauce, and caramel sauce and whipped cream
Pancakes with lemon, and maple syrup
My waffle, with fruit salad and cream
Jelly
Feijoa Ice-cream
Feijoa Ice-cream Recipe
4 eggs
1 cup Caster Sugar
300 ml Cream
2 Cups Feijoa Pulp - mashed
Separate the eggs.
Whisk egg whites until Stiff
Gradually add the sugar, keep beating until stiff and glossy (just like making meringues).
Beat in the yolks
Whip the cream until thick
Fold into the egg mixture with the feijoa pulp.
Spoon into an plastic container and freeze. Put a layer of baking paper on the top to stop any ice particles forming.


Just light a Fire

 During our daily walks, Tighe and I pick up fire making supplies.
 Tihi reserve has lots of Eucalyptus trees, and their bark is great for fire making.
Of course, an urchin needs to burn a stick or two.

Quarantinis - cocktails in lockdown

Staying in our bubble, making do with what is in the cupboard.

Moscow Mule

A Moscow mule dates from World War II (1940s). A cocktail made with vodka, spicy ginger beer, and lime juice, garnished with a slice or wedge of lime.
 Fill glass with ice
Add 30mls of vodka
Top with ginger beer and squeeze some fresh lime
Be generous with the lime, much nicer with more lime.


Vanilla Vain
Refreshing cocktail with vanilla and vodka
30 ml Vodka
Splash of vanilla extract
75 ml Apple Juice
75 ml Ginger Beer
1 Wedge Apple
Ice Cubes

Fill a highball glass with ice cubes. Add all ingredients. Garnish with an apple wedge.

Dark and Stormy

The Dark and Stormy cocktail was not born from the windy blackness of London, nor was it created in a barroom catering to the alcoholic needs of woebegone writers. In fact, it has nothing to do with bad literary tropes and gothic language. The Dark and Stormy is a drink that came to be in the Caribbean waters, where rum is plentiful and so are sailors. It’s a drink that was spit out by the sea, more or less.

30 ml Dark Rum
75 ml Ginger Beer
Lime juice

Fill a tall glass with ice cubes. Add rum. Pour in ginger beer and lime juice.
Stir with a barspoon. Garnish with a lime wedge.
The lime juice is the best part!

Jamaican Punch

2 ½ cups pineapple juice
2 ½ cups orange juice
1/2 cup dark rum
375mls Pineapple and coconut beer (Bundenberg)
¼ cup fresh lime juice
1 orange, sliced
1 lime, sliced
1 lemon, sliced


Apple Blossom

1 oz of Brandy
2 oz of apple juice
1 tsp of Lemon Juice
1 dash of Vodka

Add all ingredients into a cocktail shaker with ice. Stir to chill and strain over ice in an old-fashioned glass.

Cosmo-not
100ml Blackcurrant juice
75ml Raspberry lemonade
Splash of lime juice

Ginger Envelope
35 ml Brandy
50 ml Ginger Wine
50 ml Lemon Lime and bitters (Bundenberg)
Splash of lemon juice

Combine together in a tall glass.

Formal Dinner (Lockdown Style)

As we cannot dine out during lockdown, Erik and I decided to treat the urchins to a formal dinner.
 The table was moved to the lounge, and turned into "The Banquet Hall", and the urchins dressed for the occasion. They have been living in their pyjamas during lockdown.
 Before each course was brought out, the urchins had to guess what it could be.

Lockdown thoughts


Stop. Listen. Papatūānuku… the earth mother is breathing. Our maunga... our mountains… standing strong. Our moana… our ocean now louder than ever. Preparing to nourish. Enjoy time with your whanau. Your families. Your loved ones… and soon we’ll unite again. Noho Tawhiti, Tū Kotahi. Sit at a distance… stand as one. We, our land, our waters, our people…we aren’t going anywhere. Dream.. plan… And when the time is right, we welcome you… but for now, listen. Papatūānuku is breathing.

Transformation - Fire and Flight

 This butterfly should hatch today. The intensity of the black has changed over the past two days.
 Sometimes lighting a fire can be a cathartic release during this isolating time.
 Tighe and I burn the cardboard, as the recycling isn't being picked up during lockdown.
